About the author:
Michel Lerouet was born in Suresnes in 1966. It was throught his grandmothers that he discovered and developed his love of cooking. Being a good student, it was at the age of 16 that he decided to take destiny into his own hands and enrolled in a hotel-restaurant school. After completing his culinary training, Michel began his practical training at the Inn of the Grand Lac, very near the home family. Proximity to family is essential for Michel and his strong sense of family still guides his choices. He completed his training at the Grand Lac where he advanced from commis to station chef to sous-chef. However, it was as sous-chef under Guy Savoy and Jean-Paul Duquesnoy that he learnt rigour, exacting standards, perfection and above all generosity. All these qualities were put to use at the restaurant Tante Louise. There, Michel’s style blossomed; his cuisine became structured and balanced, never indulging in excess. What he loves are dishes with measured rhythms which slowly come to the fore, where flavours develop progressively, without shocking the palette. Michel Lerouet gives the very best of himself, applying all his savoir faire and determination to constantly ensure product quality in keeping with the image of Ladurée.
